I didn’t post anything yesterday because I couldn’t.
Early yesterday morning I got an email with great and fantastic and once-in-a-lifetime news.
We found out yesterday that my daughter is the winner from Utah of the 2015 PBS Healthy Lunchtime Challenge!
She gets to go to Washington D.C. to have lunch at the White House with the First Lady (and I get to tag along). SQUEEEL!
This is possibly the most exciting thing that has ever happened to our family. I couldn’t share the news until it was made public by the contest sponsors, which has been so hard. I just want to shout it out to the world.
Here is a run down of the events. We will fly to Washington D.C. and meet up with the other winners. We get a private tour of Julia Child’s kitchen at the Smithsonian (which I am WAY more excited about than my daughter is. She doesn’t even get who she is.) Then there are some demonstrations on healthy cooking and eating. Then the winners will work on a service project and finally have a dinner party at the hotel. The next day we get to go to the White House to meet the First Lady and participate in the “Kids State Dinner.”
The whole point of this contest is to encourage healthy eating by following the My Plate guidelines (which I fully support, since our country and are kids are heading down a bad road right now.) The My Plate Guidelines encourage filling half your plate with veggies and fruit, then rounding it out with lean proteins, low fat dairy and whole grains.
Since this contest is all about healthy eating, I’m going to share a healthy recipe today. It will be in a separate post.
