How To Freeze Cucumbers

To properly freeze cucumbers, there are a few different methods that you can try. Namely, you can try:

Method #1 – Brine

Chop the cucumber into thin slices that are roughly the same size. You can peel them if desired, but this is an optional step. Put these slices of cucumber into a bowl.

Add a pinch of salt and chopped onions. Using a spoon, mix these ingredients thoroughly. Leave the cucumbers alone for two hours to get them time to sit.

Rinse these vegetables in cold water. Transfer the cucumbers to a new bowl. In this bowl, add equal-parts white vinegar or apple cider vinegar, sugar, and oil. It is recommended that you add ⅔ of a cup of each of these ingredients.

In addition, add a small number of celery seeds, approximately 1 teaspoon. Mix these ingredients, which will form a brine.

Pour the cucumber and the brine mixture into containers that are freezer-safe, such as jars or freezer bags. Be sure to leave at least an inch of headspace, as the liquid will expand during the freezing process. Add this container to the freezer.

When it comes to thawing these frozen cucumbers, you should wait at least one week before defrosting them.

Can You Freeze Cucumbers?

Method #2 – Puree

To use the puree method, you will need to put the cucumber in a food processor (see also: Grater 101: Types Of Graters And What To Use Them For)and add a little bit of cold water. Blend these cucumbers until they develop a smooth consistency.

Transfer this puree to an ice cube tray. Alternatively, you can use an airtight container that is suitable for freezing. Place the container in the freezer.

This method works best if you are using the cucumber to make drinks or a sauce. After all, the cucumber will still be in puree form once it has been thawed. 

Alternatively, you can keep this cucumber puree frozen and add the ice cubes to different drinks. These ice cubes will be an amazing addition to cold soups, such as gazpacho or cold cucumber soup. 

Method #3 – Ice Cube

Chop the cucumber into thin slices that can fit into an ice cube tray. Place the cucumber slices into the different slots of the tray. To add to the taste of these ice cubes, you may want to add flavorings. This includes lemon juice or herbs.

Put the ice cube tray into the freezer and wait for them to freeze fully. These cucumbers can either be thawed or they can be added to drinks straight from the freezer to make them cold and refreshing. 

Method #4 – Cookie Tray

The last technique that you can utilize to freeze cucumbers will involve a cookie tray. Wash and slice the cucumbers, cutting them into spears. Cover a cookie tray or baking tray with non-stick baking parchment. 

Spread the cucumber slices across the cookie tray in a single layer. Put the cookie tray into the freezer for a couple of hours.

Once the cucumbers have frozen, remove them from the freezer and put them in a freezer-safe container, such as a freezer bag. 

Add a label to the container with the date on it so that you know when the cucumbers were frozen. Place this container in the freezer. 

How To Defrost Cucumbers

After you have frozen the cucumbers, you will need to defrost them. To do this, you should place the cucumbers in a bowl and put this bowl in the fridge for roughly 8 hours.

Then, leave the cucumbers on the counter for a few minutes. Remember to drain the cucumber before using it. 

You should bear in mind that defrosting will only work for some of the aforementioned freezing techniques.
