Can All Zucchini Be Eaten Raw?

These will all contribute to the cucurbitacin levels in the fruit, which can then make it unsafe to ingest raw. You will be able to tell if a zucchini had too much cucurbitacin in it if you take a bite, and it is very bitter.

Any zucchini (or any of the above-mentioned foods that can cause TSS) should be cooked if there is a very slight bitter taste to it.

If you are uncomfortable with the idea of eating raw zucchini, then just cook it! It is still delicious and versatile, so experiment with some different recipes if you like.
