One more week until the Super Bowl. You still have a little time to plan your menu.
One of my favorite salads is the lettuce wedge. It’s simple and really tasty. If you want something that contains a little fiber for your feast, then consider making Lettuce Wedge Bites. All the tastiness of the wedge salad in a bite. Genius!
Just grab your favorite thick cut bacon and cook it up. Just don’t get it too crispy, or it will kinda fall apart on the skewer.
If you can find those little appetizer skewers, great! If you can’t (I couldn’t), just cut normal skewers into shorter lengths. I did this with wire cutters, but you can do it with scissors and elbow grease if you have to.
Cutting the lettuce into little squares takes the most mental prowess. Luckily there is plenty of lettuce to experiment on. You just want to have little stacks.
Drizzle the dressing on right before serving, so the bites don’t get soggy. I prefer blue cheese, as that is the classic wedge salad dressing. However, you can also use ranch if you aren’t a blue cheese fanatic.
These really couldn’t be easier. Just a little time to assemble.

Ingredients
- 1 head iceberg lettuce
- 1 pint cherry or grape tomatoes
- 1 lb thick cut bacon, cooked
- 1 bottle blue cheese or ranch dressing
- Short skewers or skewers cut into 2 to 2 1/2 inch pieces.
Instructions
- Core lettuce and cut into cubes. You will want a little stack of lettuce leaves.
- Thread a tomato, a square or two of bacon and then a small stack of lettuce.
- Continue until you run our of ingredients.
- Drizzle with dressing right before serving.
