One of my favorite parts of summer is fresh corn on the cob. We have a little stand just down the street that sells farm fresh corn and there is nothing better than fresh picked corn.
Whenever we have a potluck or BBQ to attend in the summer, I often go straight for a corn dish to share because they are simple, seasonal, quick and delicious. I’ve previously shared is one of my favorite Corn Salad recipes, but this grilled chili lime corn salad is making a run for the title of “favorite corn salad.” I think lime pairs so well with corn. The tartness sets off the sweetness of the fresh corn. Add a little heat with some cayenne and a little saltiness with feta cheese. You really can’t go wrong here.
I’ve shared before how I prefer to grill the corn on the BBQ instead of heating up the kitchen. It make things simple and gives the corn a little smokey flavor.
This salad is done in about 30 minutes, which is awesome when you are rushing to get to that BBQ on time and still have to wipe the grime off of all your children’s faces, hands, feet, chests, hair and pretty much every surface to convince your friends (and maybe yourself) that your children don’t actually live in a dumpster in the back yard.
