There is a local cookie shop called Ruby Snap. They have an assortment of sinfully decadent cookies. I’ve tried a few different types of their cookies and haven’t hated any of them. Any of them (can you imagine?) I was perusing their menu and saw a cookie that caught my eye. They call it “Lilly” (all of their cookie names are pinup ladies names.) It is a lemon cookie with lemon heads candies inside and a lemon glaze. I needed this cookie. Lemon Head Cookies.
Unfortunately, the shop is not conveniently close to home. So I had to imagine what it would taste like and make my own.
I haven’t actually eaten the ones from Ruby Snap, but I don’t think I need to. These were a home run!
Lemon cookie, with lemon candies with lemon glaze. What’s not to love? Now I only have to figure out how to make a homemade Margo and life will be complete!
Ingredients
- 1 cup butter (room temperature)
- 2 cups granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1/4 cup fresh squeezed lemon juice
- 1 tablespoon lemon zest
- 4 cups all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup Lemon Head candies slightly crushed
- 1/3 cup fresh squeezed lemon juice
- 2 cups powdered sugar
Instructions
- Preheat oven to 350.
- Cream butter in a stand mixer. Add sugar and beat until fluffy. Add eggs, vanilla and lemon juice. Beat until well combined.
- In another bowl, mix together the dry ingredients.
- Add the dry ingredients to the butter and beat slowly until just combined. Add lemon zest and Lemon Heads, just until evenly distributed.
- Scoop out golf ball sized cookies onto a lined cookie sheet. Bake for 10-12 minutes. The cookie should just just be set on the top, not shiny. The bottom should not be browned.
- Let the cookies sit on the cookie sheet for a few minutes before trying to transfer to a cooling rack.
