This roasted cilantro lime cauliflower recipes transports cauliflower from something pretty yummy to something you can’t stop eating. And it’s way better to eat cauliflower than potato chips. Plus, cauliflower is the weirdest and coolest name for something. Just repeat it a few times and it starts to sound like an alien word.
This recipe makes the cauliflower tangy and salty and full of earthy deep flavor. The roasting brings out a little sweetness and gives it little crispy edges. It is the best.
It is an easy side dish to add to any meal.

Ingredients
- 1 head cauliflower, cut into florets
- 1/2 teaspoon salt
- 1 teaspoon cumin
- 1 tablespoon olive oil
- juice of 1 large lime (1-2 tablespoons)
- 1/4 cup cilantro, chopped
Instructions
- Preheat the oven to 400.
- Toss cauliflower, salt, cumin and oil and spread in one layer on a baking sheet.
- Roast cauliflower for about 20-25 minutes or until just starting to brown. Stir every 5 minutes or so.
- Remove cauliflower and toss with lime juice immediately. Allow to cool for a few minute before tossing with cilantro.
