Hallelujah! Here is another recipe that is quick and won’t heat up your kitchen. I love summer! You will thank me when you are older. Or you can thank me now.
This Southwestern turkey wrap has a great combination of flavors and textures. It is simple, but is it still full of flavor. We wrap them in saran wrap and take them with us to soccer games or to the park. Don’t wrap them up the day before, however, because the mango starts to get soggy.
I love the fresh deli turkey at Costco. It is nitrate free and that is healthier. I try to be healthy, unless it is inconvenient (just being honest here.) Then I just go with whatever is available. And if that means I only eat Good & Plenty’s, then so be it. So, thanks Costco for having a convenient nitrate free lunch meat that isn’t eight times the cost of regular, cancer causing lunch meat. I salute you.
You can use regular full fat cream cheese or reduced fat cream cheese in this recipe. And you can vary the intensity of the heat in the cream cheese spread with the amount of jalapenos you add. We tend to keep it pretty mild for the sake of the children and I probably use about 1 1/2 tablespoons of jalapenos in the spread.
In unrelated news, today, I learned we have a family motto. Many families have a motto like, “work hard, play hard” or “always there to care.” Shawna’s family motto is “our family is a circle of strength and love.”
Today I told The Wrecking Ball that he could have more Fruit Loops (they almost awarded me Mother of the Year for letting them have those today) if he first ate what I had given him. Dr. Jones responded, “That’s our family motto!”
That’s right folks. “Eat what you have, and if you are still hungry I’ll give you more.” That’s our family motto. Producing fine specimens of upstanding, productive citizens in the community one child at a time. That’s what we do here.
